martha stewart cupcakes club-sweet potato!

first of all, i must apologize for posting a day late, but i have a good excuse...apparently, i still live in the stone age! i've recently moved to a rather rural part of vermont and the town does not have the internet yet...yes, you heard me right, does not have the internet. comcast has dug the lines (we know this for sure or we wouldn't have bought the house) but they just haven't "turned it on" yet. so, i've been almost 2 months without internet (except for my breaks at work, one of which i'm on now).
okay, now for the cupcakes...i like sweet potatoes, i like cupcakes, so i knew this cupcake was going to be tasty and it was. the marshmallows worked out perfectly...i was going to make marshmallow buttercream, since i've never broiled anything in my life and was kind of nervous about that, but i decided to give it a go...however, i almost burned the marshmallows trying to great a good shot of them in the oven.
but, they turned out pretty great and they were so yummy!
i halved the recipe and got 30 mini cupcakes...cause mini is how i roll...
karen from http://www.karenscookiescakesnmore.com/ picked the cupcake this month and it was a good choice...i brought them to work for my co-workers, and they all enjoyed them!

  2. I love those toasted marshmallows! Yours look awesome! I wish I can take a big bite out of that one!

    As for the internet, I can't believe that! Vermont of all places.
